Eve’s Plum Pudding

Serves 6 Ingredients Method

1lb of Victoria plums, halved and stoned.

2oz of Demerara sugar

Grated rind of one orange

4oz of soft margarine

4oz of caster sugar

2 eggs

4 ozs of slef raising flour

1tsp of baking powder

Grease a large pie dish and put the halved plums in the base. Sprinkle with the Demerara sugar and orange rind. Put all the remaining ingredients into a bowl and beat for 2-3 minutes until smooth and creamy. Spread the sponge mixture evenly over the plums. Bake at 180 degrees C / 350 degrees F / Gas Mark 4 for approximately 1 hour. Serve warm with custard or cream.
