Kiwifruit and Avocado Appetiser

Serves 1 Ingredients Method

3 Avocados

2 Kiwifruit,

sliced 4oz peeled prawns

A few tablespoons of lemon vinaigrette

Halve the avocados and remove the stones. Scoop out the flesh in the shape of small balls. Place the avocado, kiwifruit and peeled prawns in a bowl. Spoon over a few tablespoons of lemon vinaigrette, taking care not to break the slices of Kiwi. Transfer the mixture to the halved avocado skins and serve on a bed of shredded lettuce.
