Apple Cake

Serves 8 Ingredients Method
4oz Butter 4oz Soft brown sugar
Grated rind of 1 lemon
1 Egg 8oz Plain flour
1 & half tsp baking powder
Half a cooking apple, peeled, cored & coarsely grated
Cream the butter with the brown sugar and grated lemon rind. Beat in egg. Sieve together the plain flour, baking powder and cooking apples and fold into the mixture. Divide between 2 greased 7” sandwich tins, spreading the surface level. Bake at 375º f, 180º c, gas mark 4, for 40-45 mins. Turn out onto a wire rack. Allow to cool, sandwich together with lemon curd and dust the top with icing sugar.
