Kiwifruit and Avocado Appetiser

Serves 1 Ingredients Method

3 Avocados

2 Kiwifruit,

sliced 4oz peeled prawns

A few tablespoons of lemon vinaigrette

Halve the avocados and remove the stones. Scoop out the flesh in the shape of small balls. Place the avocado, kiwifruit and peeled prawns in a bowl. Spoon over a few tablespoons of lemon vinaigrette, taking care not to break the slices of Kiwi. Transfer the mixture to the halved avocado skins and serve on a bed of shredded lettuce.

Kiwifruit Icecream

Serves 1+ Ingredients Method

3 ripe Kiwifruit

1⁄2 cup of whipping cream

3 tblsp of icing sugra

1 tblsp of brandy

Peel the Kiwifruit and mash to a pulp. Whip the cream until thick and mix in the sugar and brandy. Fold Kiwifruit evenly into the cream mixture. Turn into a small mould or freezer tray and cover with wax paper. Freeze for several hours until firm. Remove from freezer about 10 minutes before serving.

Kiwifruit Cooked Chicken

Serves 4 Ingredients Method

10oz cooked chicken,

chopped 3 spring onions

1⁄2 cucumber, split lengthways, seeded and diced

4 tblsp of natural yogurt Salt and pepper to taste 2 tblsp of Mayonnaise Juice and grated rind of half a lemon

1 clove of Garlic,

crushed 1 tblsp of chopped, fresh mint

1 frilly endive or shredded lettuce

4 Kiwifruit, peeled and sliced.

Sprigs of fresh mint.

Mix the chicken with the spring onions and diced cucumber. Blend the yogurt with salt and pepper to taste, mayonnaise, lemon rind and juice, garlic and fresh mint. Stir the prepared dressing into the chicken mixture. Arrange on a bed of either endive or shredded lettuce on a flat platter and spoon the chicken mixture on top. Arrange a border of sliced Kiwifruit all the way round the chicken. Decorate with sprigs of fresh mint.
