Sharon Ginger Cream

Serves 6 Ingredients Method

2 Sharon fruit, peeled, 1 sliced, 1 chopped.

4oz cream cheese

102 tblsp caster sugar

1oz walnuts, finely chopped

1oz preserved ginger, finely chopped

1⁄2 a cup of double cream

2 oz of butter

4 oz digestive biscuits, crushed

1 tblsp of brown sugar

Arrange the slices of Sharon fruit in the bottom of a small loaf tin. Beat the cream cheese with the sugar until light and smooth, then fold in the chopped fruit, nuts and ginger. Whip the cream, fold into the tin and refrigerate until firm. Melt the butter and mix thoroughly together with the biscuit and brown sugar. Spread this onto the cheese mixture, patting it well down. Refrigerate until required. To serve, turn out onto a dish and cut into slices.



Tropical Sharon Fruit Salad

Serves 4 Ingredients Method

4 just ripe Sharon fruit, peeled and sliced

2 kiwi fruit, peeled and thinly sliced

1-2 tblsp of pecan or pistachio nuts, chopped

1 tblsp of clear honey to taste

1-2 tblsp Cointreau Decorate:

4oz of soft fruit like raspberries, tayberries, red or blackcurrants

fresh raspberry leaves

four (or one large) serving plates, arrange a layer of Sharon fruit and kiwi fruit in a circle. Sprinkle on the nuts and chill. Mix the honey with the Cointreau and pour over the fruit. Decorate the plates with the soft fruit and cleaned leaves.



Sharon Fruit and Smoked Chicken

Serves 4 Ingredients Method

2 Sharon Fruit

3 tblsp of olive oil

2 tblsp of white wine vinegar

1 tblsp of chopped chives Salt and freshly ground black pepper

1/2lb of smoked chicken, cut into strips

1 small, crisp lettuce, such as Cos

2oz of Feta cheese, coarsely crumbled.

Cut the top off each Sharon fruit and scoop out the pulp. Slice the outer shells into thin strips. Mix the Sharon fruit pulp with the olive oil, vinegar, chives and salt and pepper to taste. Arrange the strips chicken and Sharon fruit on a bed of lettuce leaves and scatter the feta cheese over the top. Thin the Sharon fruit dressing to the desired consistency with a little lemon juice, orange juice of dry white wine. Spoon over the salad and serve immediately. Ideal either as a light lunch or supper.
